Colmans Crab Cakes Recipe

450g freshly picked chunky white crabmeat
100g white breadcrumbs
4 tbsp mayonnaise
1 egg
1 tbsp Dijon mustard
1tbsp Worcestershire sauce
1 finely chopped chilli
chopped chives and tarragon
salt and freshly ground pepper
olive oil for frying
1 lemon

Place crabmeat in a dish and check for any bits of shell, then scatter over the ingredients and mix very carefully with the crab,  taking care not to break the crabmeat up too much.

Carefully form into 8 small cakes.

Refrigerate for one hour.

Heat a little olive oil in a pan until hot.

Carefully place in the cakes and cook for about 2-3 minutes on each side until golden brown.

Serve with a colourful salad.
